1.Cook the Dal

2.Cook Vegetables
In a heavy-bottomed pot, cook chopped vegetables with 2 cups water, salt, and turmeric until tender but not mushy. Add tamarind extract and bring to a gentle boil.
3.Add Sambar Podi
Mix Iyer sambar podi with 1/4 cup water to make a smooth paste. Add this to the boiling vegetables and cook for 5 minutes, stirring occasionally.
4.Combine Dal
